Overview

Cocktails are at the heart of The Aubrey. The Omakase Cocktail Experience is the first of its kind in the UK, inspired by the Japanese concept of “omakase”, meaning “I’ll leave it up to you”. Traditionally associated with dining, The Aubrey reimagines this philosophy as an immersive and highly personalised cocktail journey.

Led by acclaimed Bar Director Pietro Rizzo and his team, the experience is tailored to your individual tastes, exploring the world of Japanese ingredients through expertly crafted cocktails.

You will explore a diverse range of Japanese spirits, including umeshu, shochu and sake, alongside Asian herbs and spices transformed into seasonal and innovative creations. The experience is complemented by refined light bites such as oysters with ponzu and finger lime, and yellowtail sashimi, before dinner in one of The Aubrey’s elegant dining rooms.
